Butter Scotch Ice Cream:
Ice cream is everyone’s favorite dessert. Butter Scotch Ice Cream is a flavor which is very popular in Asian Countries like India but do not worry because you can make it at home by this amazing recipe. For Butter Scotch Ice Cream:
1 cup heavy whip cream
1/2 cup sweetened condensed milk
1 tsp butter scotch essence
2-3 drops of yellow food color (optional)
1/4 cup Milk powder (optional)
Ingredients for praline:
2 Tbsp butter
2 Tbsp chopped almonds or cashews
4 Tbsp sugar
Take one glass bowl which i had kept in freezer for 15 minutes to chill along with hand mixer blades. This help in beating cream quickly.
Now in the bowl add cream and with hand electric mixer beat it on low speed for 25 to 30 seconds. You can also use hand mixer too.
After 30 seconds cream is started to get thick.
Now to this beaten cream add sweetened condensed milk, butter scotch essence and yellow food color.
Fold in gently. You can use vanilla essence instead of butter scotch essence.
Add 1/4 cup milk powder. It is optional but it gives very nice taste to ice cream.
We need to beat it till every thing combined well and ice cream mix gets stiff peaks. Lets beat it for another 10 – 15 seconds.
Do not over beat otherwise it will become buttery.
Now transfer ice cream mixture to a glass or plastic container. If you wish you can set in the same container too.
Flatten ice cream with spoon or spatula. Cover it with cling wrap or aluminium foil, cover container with lid.
Keep the container in freezer for 3 – 4 hours.
While ice cream is getting set lets make praline.
Grease a plate with a little amount of clarified butter and keep aside.
In a pan add sugar and let it melt on medium flame. Stir often to prevent sugar get burn.
After 30 seconds as you can see sugar gets caramelized. Now turn the flame to low and to this add butter and chopped almonds and mix.
You can use cashews too or almonds and both as well.
Turn off the flame and transfer this mix to greased plate.
Let this praline set for 25 – 30 minutes.
After 30 minutes break praline into pieces. Transfer into zip lock bag. With rolling pin crush it. Do not make fine powder.
Our praline is ready.
Now take out ice cream from freezer and add praline to it. You can adjust praline amount according to your preference.
Fold in gently also sprinkle some on top.
Cover again with cling wrap and let the ice cream set in freezer for 7 – 8 hours or overnight.
Butter Scotch Ice Cream is ready to serve.
