INGREDIENTS:

FOR GOL GAPPAY:
Soji (Semolina) 1 cup
Maida (Flour) 1/2 cup
Mash ki daal ka ata 2 tbsp
Soda gondhne k liye
Oil for deep fry

FOR FILLING:
Aloo 1 cup (boiled)
Bondi 2 cup

FOR SOUR WATER:
Podine k patte (mint leaves) 1/2 gathi

Hari mirch ( green chili) 3
Water 1 litre
Imli ka goda 1/2 cup
Dhaniya 1 tsp roasted and powdered
Zeera 1 tsp roasted and powdered
Lal mirch powder 1/2 tsp
Salt 1/2 tsp
Adrak 2 tbsp crushed
Lemon juice 2 tbsp

METHOD:

FOR SOUR WATER:
1. Blender main podine k patte hari mirch or kati adrak daal kar achi tarha pees lain. Ab is paste ko pani main shamil kar dain.

2. Sath he imli ka goda, bhuna or pisa dhaniya, bhuna or pisa zeera, pisi lal mirch, namak or lemon juice daal kar achi tarha mix karain.

3. Is k baad khatte pani ko chaan kar fridge main thanda hone k liye rakh dain.

FOR GOL GAPPAY:
1. Aik pyale main soji, maida or mash ki daal ka atta mix karain. Phir use hasbe zarorat club soda daal kar gondh lain. Atte ko 30 mint k liye rakh dain, phir use dobara gondhain.

2. Ab hatheeli par thori si chiknai laga kar chote paire banayain. Har paire ko choti pori ki shaqal main bail lain or geele kapre k darmiyan main  10 mint k liye rakh dain.

3. Akhir main ise garam tail main halki anch par fry karain k pholne lagain. Phir anch taiz kar k crispy ho jane tak fry karain.

FOR SERVING:
1. Angothe ki madad se aik gol gappay main surakh karain.

2. Is main uble aloo or pani main 10 minute bheegi hoi bondi bharain.

3. Agar pasand ho to imli ki chatni bhi dal sakhte hain.

INGREDIENTS:

Mince 1 kg
Onion 1
Capsicum 1
Tomato 1
Green chili 3
Coriander leafs 1/2 cup
Coriander seeds 1 tbsp
Cumin 1 tbsp
Red chili powder 1 tbsp
Salt as required
Besan 1/4 cup
Pomegranate seeds 2 tbsp

 

METHOD:

  1. Chop and mix onion, capsicum, tomato and green chili into mince.

  2. Along that also mix well salt, red chili powder, besan, pomegranate seeds and all other ingredients.

  3. Now coat the mince on skewe and make its BBQ or cook into pan.

  4. Afghani Kabab is ready to serve.

INGREDIENT:

Mutton 1/2kg
Timator 4 – 5
Hari mirch 2 – 3
Haldi 1/2 tsp
Oil 1/2 cup
Zeera bhoon k pisa hoa 1 tsp
Salt to taste
Kutti hoi lal mirch 1/2 tbsp
Kali mirch pisi hue 1 tsp
Lehsan adrak paste 1 1/2 tbsp
Hara dhaniya bareek
Kati adrak for garnish
Koyla ka 1 tukra

 

METHOD:

  1. 1 patile main thora oil garam kar k timator dal k paka lain k timator ka pani khusq ho jaye or oil uper ajaye.

  2. Phir alag se karahi main mutton, haldi or pani dal k ghost ko adha paka lain.

  3. Jab ghost adha gal jaye to is ka pani khusq kar k oil dal lain or lehsan adrak paste dal k ghost ko ache se fry karain.

  4. Sare masale dal k ache se mix karain or timator ka paste dal k ghost ko pura gala lain.

  5. Last main koyla ka dhuan dain 2 min.

  6. Qasori meethi, hari mirch, adrak or hara dhaniya se garnish kar k 5 min dam dain.

  7. Koyla karahi is ready to serve.

INGREDIENTS:

Flour 1 1/2 cup
Eggs 2
Butter 50gm
Sugar 1 cup
Milk 1/2 cup
Vanilla essence 1/2 tsp
Cocoa powder 3 – 4 tbsp
Baking powder 1 tsp
Chocolate chips for garnish

 

METHOD:

  1. Sab se pehle maida (flour), baking powder or cocoa powder ko chan k alag rakh dain.

  2. Phir 1 bowl main butter or sugar dal k beat karain.

  3. Ab one by one eggs shamil kar k beat karain.

  4. Beat karne k baad vanilla essence dal k achi tarha se beat karain.

  5. Phir maide wala mix bowl is main ahista ahista dal k spoon se fold kar lain

  6. Akhir main milk dal k achi tarha se sab ko mix kar lain or spoon se cup cake k pan main mix dal k pehle se 180C pe pre-heat oven main bake karne rakh dain for 15 – 20 min.

  7. Last main Chocolate chips ya sprinkles se garnish kar lain.

  8. Chocolate Cupcakes are ready to serve.

Pyaz bareek kati hoi 1 medium
Hari mirch 2 – 3
Hara dhaniya thora sa
Corn flour 1 tsp
Anda 1
Bread slice 2
Oil for frying

 

METHOD:

Keema main kutti hoi lal mirch, pisa hoa garam masalah, namak, dhaniya kutta hoa, bhuna hoa zeera powder, lehsan adrak paste, pyaz bareek kati hoi, hari mirch, hara dhaniya, corn flour, anda, bread slices ko pani m halka sa dip kar k nikal le or pani nichor de phir keeme main dal k achi tarha sab cheezon ko mix kar lain. Ab is keeme k chapli kabab bana k shallow fry kar lain 10 se 15 min tak. Chapli Kabab is ready to serve.

METHOD:

  1. Beef main kutti hoi lal mirch, pisa hoa garam masalah, Salt, tikka masalah, lehsan adrak paste, pisi hoi hari mirch, dal k pakane rakh dain.

  2. Gosht achi tarha se gal jaye phir us k reeshe kar lain.

  3. Phir alag se aloo ko boil kar k mesh kar lain or reesha kiya hoa gosht is main dal dain or hara dhaniya bhi dal k mix kar lain or kabab k shape de kar ande main dip kar k fry kar lain.

  4. Reesha kabab is ready to serve

  5. Serve it with naan and chutney.

INGREDIENTS:

Mince (keema) 1/2 kg
Coriander 1 tbsp
Long pepper (pipli) 2 piece
Onion 1
Cumin 1 tbsp
Chili crushed 1 tbsp
Salt 1 tsp
Green chili 3

FOR MASALAH:

Brown onion 1
Tomato 4
Green chili 3
Salt as required
Cayenne pepper 1 tsp
Garam Masalah 1 tsp
Fenugreek seeds (maithi) 1 tsp
Turmeri powder 1/2 cup
Cumin 1 tsp
Coriander 1 tsp

 

METHOD:

  1. Blend mince in chopper including chili crushed, long pepper paste (pipli), cumin, coriander, chop onion and green chili.

  2. Now give it a shape like seekh kabab and fry in little amount of oil.

  3. In a pan add 1/2 cup oil, tomato, chop green chili, incision the ginger garlic and add all masalah ingredients into the pan and add water.

  4. After adding water cook it well then add brown onion and seekh kabab.

  5. Then add more 1/2 cup water and cover it with lid. If you want to add Coal you can add it.

  6. Seekh kabab Masalah Recipe is ready to serve. 

  7. Garnish it with coriander leafs and serve it.

TIkka Boti

INGREDIENTS:

Mutton (boneless) 1 kg
Garam masala (paste) 2 tsp
Ginger 2 inch piece
Ghee 150 gm
Yogurt 150 gm
Salt as required
Cayenne as required
Garlic 1 piece
Dried coriander 2 tsp
White cumin 2 tsp

 

METHOD:

  1. Boil the mutton.

  2. When it is half boiled take off from the stove.

  3. Mix all the spices in yogurt and add mutton into it.

  4. Coat these mutton pieces on skew and cook until it turns red in color. Spread some ghee on it from spoon.

  5. When tikka boti turns complete in red color, take off from the skew.

  6. Tikka boti is ready to serve.

  7. Serve it with salad.
